Ingredients
450 g | lean rump or sirloin steak |
1 tbsp | chopped chives |
3 tbsp | olive oil |
1 large | Cos lettuce, roughly chopped |
75 g | bread croutons, toasted in a little olive oil |
some | Parmesan cheese |
| For the Dressing: |
2 tsp | Dijon mustard |
2 tbsp | lemon juice |
4 tbsp | olive oil |
2 tbsp | Parmesan cheese, grated |
1 tsp | anchovy sauce |
| salt & pepper |
Steps
Mix together chives, seasoning and olive oil and brush the steaks with the marinade on both sides. Set aside for 5 minutes.
Cook the steaks under a preheated grill or in a griddle pan according to your preference. Transfer to a plate and leave to rest for 5 minutes. Slice on the diagonal and place in a large salad bowl. Add the lettuce leaves & croutons.
For the dressing, put all ingredients into a screw-topped jar and shake well. Drizzle over the salad, garnish with Parmesan shavings and serve.
